About LessCarby

Hi, I’m Maximo Duluc, the founder of LessCarby. I’m 58 years old, live in Virginia, and have been living with diabetes for more than 15 years. Welcome to the site. I’m glad you’re here.

Living with diabetes changed the way I look at everyday foods, especially bread. Like many people trying to reduce carbohydrates, I wanted options that would let me enjoy familiar meals while making more thoughtful choices. But I quickly learned that finding a good low-carb bread is not as simple as picking up a package with “keto” or “low carb” printed on the front.

My wife and I began buying and tasting the keto and low-carb breads we could find. Some looked promising but did not taste very good, while others surprised us with better flavor or texture than we expected. Over the years, we have personally tried dozens of brands and varieties, including the breads featured in LessCarby reviews.

LessCarby grew from those experiences. I wanted to create a friendly, practical place where I could share what we have learned and help other people sort through the many choices available. My goal is to offer honest observations, clear label information, and useful guidance so readers can decide what may work best for their own needs.

Why I Created LessCarby

I created LessCarby to help people make more informed choices without giving up bread entirely. The site shares practical reviews, comparisons, recipes, nutrition explainers, and tools for readers who want to reduce carbohydrates.

How We Review Bread

Our product coverage combines firsthand tasting with label research. When we say we tested a bread, my wife and I personally tasted it. We consider flavor, texture, serving size, labeled carbohydrate and fiber information, ingredients, availability, price, and how useful the bread is in everyday meals.

Product formulas, prices, and availability can change. Readers should check the current package label, especially when managing diabetes, allergies, or other dietary needs.

Our Approach to Health Information

My experience with diabetes shapes the questions I ask and the practical details I pay attention to, but I am not presenting myself as a doctor or dietitian. LessCarby provides general educational information and personal experience, not individualized medical advice. Talk with a qualified healthcare professional about decisions related to diabetes treatment, medication, or your personal eating plan.
